Fudgy Buttermilk Brownies

Ingredients

For the brownies 

1 teaspoon vegetable oil 

100g white flour 

50g wholemeal flour 

175g soft brown sugar  

50g cocoa powder 

½ teaspoon baking soda 

1 large egg  

1 medium cooking apple, sliced, gently cooked in a little water and mashed 

120ml low fat buttermilk 

2 teaspoons vanilla essence  

For the Icing  

150g icing sugar sifted  

50g cocoa powder 

1-3 tablespoons skimmed milk

We all love to indulge in chocolate but unlike most chocolate recipes this one is made with low fat buttermilk.  So whether you decide to ice or not you are sure to enjoy tucking into these.

Ingredients

For the brownies 

1 teaspoon vegetable oil 

100g white flour 

50g wholemeal flour 

175g soft brown sugar  

50g cocoa powder 

½ teaspoon baking soda 

1 large egg  

1 medium cooking apple, sliced, gently cooked in a little water and mashed 

120ml low fat buttermilk 

2 teaspoons vanilla essence  

For the Icing  

150g icing sugar sifted  

50g cocoa powder 

1-3 tablespoons skimmed milk

Method

Preheat the oven to 180C.  

Lightly grease a 9 inch square baking tray with vegetable oil.  

Stir together both flours, sugar, cocoa powder and baking powder. 

Separately in another bowl whisk the egg.  Add the apple, buttermilk and vanilla extract. 

Add to the flour mixture and mix until well blended. 

Pour into the baking tray. 

Bake for 30 minutes.  

If making the icing stir together the icing sugar and cocoa powder  

Gradually add the milk until you reach a spreading consistency.  Spread over the cooled brownies.  When set cut into 16 squares and carefully ease out of the tray.
