A great way to eat more vegetables and add crunch, colour and nutrients to your meal. Poppadums are a great low-fat choice if microwaved or grilled (approx. 0.2g per poppadom). They make a great alternative to crisps. Avoid pre-cooked poppadoms, which are much higher in fat. Carrots count towards your 5 a day.
Ingredients
2 carrots, peeled and grated
3-4tbsp lemon juice, as desired
2 tsp tomato puree
1/2tsp mustard (optional)
Good pinch red chilli powder, or to taste
To serve:
Cumin seeds, for garnish
2 grilled poppadums
Method
Simply mix all the ingredients together for the carrot pickle and adjust the chilli as desired.
Scatter with cumin seeds and serve with a grilled or microwaved poppadum.
