An easy classic with a plant-based twist! Our rice pudding is made with plant-based alternatives and topped with a zingy summer berry compote. And it’s passed the heart healthy checks* - low in sugars, salt and saturated fats!
Ingredients
100g Alborio or pudding rice
1 L Alpro Soya No Sugars drink
2 tsp almond extract
100ml Alpro Plain ‘No Sugars’ or Alpro Plain Greek style alternative to yogurt
For the Fruit Compote
200g frozen mixed berries, defrosted (or a mixture of seasonal fresh strawberries, raspberries, blueberries)
Zest & juice of 1 orange
1 tsp cornflour mixed with 1 tbsp of the orange juice
1 tbsp maple syrup or sugar
To serve (optional): 25g toasted almonds
Method
Pour the rice into a medium size saucepan and add the Alpro Soya No Sugars drink and the almond extract and cook over a medium heat for 30 minutes, stirring occasionally.
Test to make sure the rice is cooked but still has a ‘bite’ to it. Ideally a runny and creamy consistency.
In the meantime, prepare the compote. If using frozen fruit: in a small saucepan blend the 1 tbsp cornflour and 1 tbsp juice till smooth. Add the frozen fruit, zest and juice and maple syrup/sugar and cook over a medium heat, stirring until it thickens. If using fresh seasonal berries: place the fresh fruit in a liquidiser or use hand-held blender and roughly blitz or roughly mash with a fork. Pour the blended fruit into a small pan. In a small bowl, blend the cornflour with 1 tbsp of the fruit juice until smooth and add to the pan with the remaining ingredients. Place over a medium heat and heat through, stirring constantly, until it thickens.
Once the rice pudding is ready, remove from the heat and allow to cool for 5 mins then stir in the Alpro Plain (or Greek style ) alternative to yogurt.
Serve with fruit compote and a sprinkle of toasted almonds if using.
Can be served hot or cold.
