Veggie Burgers

Ingredients

300g spinach leaves, washed and finely chopped

100g red potatoes, peeled and boiled

100g green peas, cooked

1 slice of wholegrain bread made into fresh breadcrumbs

2 green chillies, finely chopped

1 teaspoon ginger, peeled and finely grated

2 tablespoons coriander leaves roughly chopped

3 tablespoons cornflour

½ teaspoon cumin seeds, crushed

1 cardomon pod, seeds crushed

3 teaspoons vegetable oil

Cooking time: 5-10 minutes

Ingredients

300g spinach leaves, washed and finely chopped

100g red potatoes, peeled and boiled

100g green peas, cooked

1 teaspoon ginger, peeled and finely grated

2 tablespoons coriander leaves roughly chopped

½ teaspoon cumin seeds, crushed

3 teaspoons vegetable oil

Method

  1. Mash and mix together all the ingredients except the oil.
  2. Take a tablespoon of mixture and flatten it to make a burger shape.  Repeat with the remaining mixture.
  3. Heat the oil in a heavy-based frying pan and lightly fry the burgers for 2 minutes on each side or until cooked well.  Drain on kitchen paper and serve hot
  4. Can be served in a crusty bun with low fat natural yoghurt and tomato slices/chutney or with salad.
