Whether you choose to open a can of tuna or cook tuna from fresh for this recipe, tuna is a versatile ingredient, very low in fat and perfect for a lunchtime butty.
This moist colourful twist on a wrap is a great standby for a healthy lunchtime treat to eat either at your desk or on the go. Don’t forget to pack it in your bag before you leave for work.
Ingredients
1 teaspoon vegetable oil
1 small onion, finely diced
1 green chilli finely chopped
½ green pepper, finely chopped
Half of a 5 oz. can tuna in water, drained
½ tablespoon light mayonnaise
Salt to taste
1 chapatti made from Elephant Atta Chakki Gold wholemeal flour
1 lettuce leaf
1 small tomato finely chopped.
Method
Heat the oil in a non-stick pan and add the onion, stir until lightly browned, then add the chilli and green pepper. Stir for a few minutes and take off the heat.
Add the drained tuna, flake with a fork and mix thoroughly. Add the mayonnaise and salt and mix well.
Make the roti by layering the chapatti with tuna mixture, lettuce and tomatoes, roll it to make a roti wrap.
