Sprout, pepper and Californian walnuts stir fry

Ingredients

1 tbsp olive oil

1 medium onion, sliced

1 medium red pepper, sliced

500g Brussels sprouts, halved

100g California Walnuts

2 tbsp redcurrant jelly

A great way to dress up sprouts on the big day.

Frozen sprouts can be used instead of fresh, just defrost before use. Try cranberry sauce instead of the redcurrant jelly.

Ingredients

1 tbsp olive oil

1 medium onion, sliced

1 medium red pepper, sliced

500g Brussels sprouts, halved

100g California Walnuts

2 tbsp redcurrant jelly

Method

Heat the oil in a large frying pan and fry the onion and pepper for 4-5 minutes. Add the sprouts and walnuts and continue to fry for 5 minutes.

Stir in the redcurrant jelly with 2 tbsp water until melted and season.
