Blueberry, Lemon, and Banana Loaf

Ingredients

240g self raising flour

1 tsp baking powder

1/2 tsp bicarbonate of soda

3 medium eggs

150g low or 0% fat natural yoghurt

3 very ripe, medium sized bananas, mashed

Zest and juice 1/2 lemon

2 tbsp honey

50g blueberries

Ingredients

240g self raising flour

1 tsp baking powder

1/2 tsp bicarbonate of soda

3 medium eggs

150g low or 0% fat natural yoghurt

3 very ripe, medium sized bananas, mashed

Zest and juice 1/2 lemon

2 tbsp honey

50g blueberries

Method

Pre-heat the oven to 170C fan/ 340F.

Line a 20cm loaf tin with baking paper.

In a large bowl mix the self raising flour, baking powder, and bicarbonate of soda.

In a separate bowl whisk the eggs together, then add the yoghurt and mix.

Next add the mashed banana, lemon juice, zest and honey to the wet ingredients and mix thoroughly.

Pour the wet ingredients into the flour mix and combine.

Finally gently fold in the blueberries.

Pour the mix into the loaf tin and bake for 45 minutes.

Check after 30 minutes by sticking a cocktail stick or knife into the centre. If it comes out clean it is ready.

Let it cool for a few minutes then turn onto a wire rack to finish cooling.
